The BEST Royal Icing Recipe EVER! - Golden Rippy (1)Yep. That’s a big promise. And I totally deliver. This IS the best Royal Icing Recipe EVER. You can thin it to outline, top-coat, and for flooding cookies. Okay, there be a lot of big words and we be but humble pirates. Lol. If you haven’t heard about outlining, top-coating or flooding cookies, then I say you’re in league with about 98% of people. You’re in good company. But if you want to take your cookies to the next level and start getting them noticed, it’s time to roll up your sleeves and start practicing. Because your fancy icing will set you apart. 😉The BEST Royal Icing Recipe EVER! - Golden Rippy (2)

I started with my sugar cookie recipe for the base. And let me just say, if you have those cookie cutters that leave imprints to help frost…don’t imprint them! They are a BILLION times easier to ice if they don’t have those dang indents. Trust me. This is what my cookies look like before frosting.

After icing them, they look like this…The BEST Royal Icing Recipe EVER! - Golden Rippy (4)And because we LOVE BB-8 so much, we made a bunch of them. I wuv him. (forgive my wonky circles, I was icing with one hand while bouncing a baby on my knee).

The BEST Royal Icing Recipe EVER! - Golden Rippy (5)My boys both had birthdays this month, and we had a Star Wars birthday party (like every year, duh). They specifically asked me to make black stormtroopers like in the video game when you reach level 50. And they asked me to make Kylo Ren, Darth Vader and a whole lotta stormtroopers. The galaxy stars were my idea. So was BB-8.

To get the silver effects on Kylo Ren and Darth Vader, I used that silver mist spray from Wilton. (Get it at Walmart). To which I quickly sprayed in my face and said “Witness Me!” (Mad Max reference) lol, which my hubby was barely amused by. Yep, sometimes I’m even too much nerd for him. Hah. But yeah, I made stencils out of freezer paper and sprayed over the black icing once it was totally dry. Wait like 6-8 hours.

BB-8 has orange sugar on it. I outlined white, flooded it, and then did wet-on-wet to add the black outline. After that was dry I outlined white circle on his body and dipped him in decorative sugar. The stormtroopers are we-on-wet. Flooded in white, and quickly added black designs. The BEST Royal Icing Recipe EVER! - Golden Rippy (7)Here’s the recipe to make the icing.

Ingredients

  1. 2 lbs. powdered sugar
  2. 5 large egg whites (or equivalent)
  3. flavoring to taste (1 tsp lemon extract, or peppermint extract, or cherry extract, etc)

Instructions

  1. Add to bowl, powdered sugar and egg whites. Start on LOW to prevent sugar from flying out, crape down, then mix 1-2 mins on HIGHEST setting. Color changes from grey to very WHITE glue-like consistency. Add flavor now and mix again. Add color after scooping out amount needed to ice, otherwise cover with plastic wrap pressed against icing to prevent "skin" from forming and tightly cover. Will last in fridge for a month (keep away from pungent foods).

Egg white substitutes

  1. 1 large egg white =
  2. 2-3 TBS pasteurized whites (egg beaters)
  3. or 2 tsp meringue powder, plus 2 TBS warm water
  4. *For this recipe I use, 10 tsp meringue powder dissolved in 10 TBS. Mix with tiny whisk before adding to powdered sugar.
  5. *********************************************************************
  6. Consistency: (per 1 cup "glue:, add water in these amounts)
  7. Outlining- 1/2 to 3/4 tsp
  8. Top-coating- 1 1/2 to 2 1/2 tsp
  9. Flooding- 2-3 tsp
  10. *Add color and mix in before adding water to thin.
  11. *If it's too thin, add more glue into it.

And here’s the video I watched to make the galactic stars. Same idea as the video, just switch to a star cookie cutter shape. And my pictures don’t show, but I had a pretty pink in there too. I LOVE watching SweetAmbs. Her videos are so much fun. She’s got a really soft voice. Perfect for her delicate cookies.

If you’re new to flooding, watch this video…

And to get an idea on how to do wet-on-wet watch the filigree video. That’s how I did the stormtroopers, BB-8 and the black stormtroopers.

Happy Baking, my Lovelies! May the Icing be with you. 😉

FAQs

How to get shiny royal icing? ›

Corn syrup helps give shine and also a soft-bite to your icing. Without corn syrup, your royal icing can be as hard as a rock, and no one wants to chip a tooth on a cookie. I use 1 Tablespoon of Karo Light Corn Syrup in my icing recipe. I've seen some cookiers use more but this ratio works well for me.

How do you make royal icing vibrant? ›

For richer, more vibrant colors, allow the first attempt to sit for at least 30 minutes before adding more drops of Gel Colors. Always remember, as royal icing dries - it does deepen and intensify! So it's best to stop a shade lighter than your desired tone.

What colors make gold? ›

The two main colours that are used to create the golden colour are brown and yellow. You will need an equal quantity of both the colours to get the traditional golden colour but you can play with the colours and add them as per your requirement.

How to use metallic royal icing? ›

What makes royal icing dry shiny? ›

Icing dries with a matte/flat finish

Usually royal icing will dry with a bit of a sheen on its own, but it is definitely encouraged by the movement of air around this. You can achieve this by directly using a fan on the cookies while they dry or using a dehydrator.

Why does my royal icing look dull? ›

Humidity will cause the icing to dry slowly, which will make it become porous, dull, fragile, and sometimes leave you with an uneven surface. Dull icing can also be caused by icing that is over-mixed, so make sure to mix your icing for no more than 5 minutes on medium-low speed.

What does adding corn syrup to royal icing do? ›

Royal Icing made with pasteurized egg whites results in an almost fool-proof product, but the addition of light corn syrup to it produces icings that dry with shiny surfaces. Depending on the humidity and other factors, however, your initial mixture will be either stiff or firm.
