I love apple turnovers, they’re such a simple yet, delicious treat. Whenever I think of typically Dutch food, apple turnovers always cross my mind as well, even though I know many countries have them, I associate apple turnovers with Dutch New Year’s Eve celebrations. They’re sold all year round but I see more of them around the end of the year where you can see stalls pop up across the country serving Oliebollen (a Dutch type of donut), apple beignets as fritters, apple beignets with puff pastryand apple turnovers. Apple turnovers are actually super easy to make yourself.

First grab all your ingredients together. Apple, puff pastry, egg, cinnamon, granulated sugar and cane sugar. (The full list of ingredients including measurements can be found in the recipe card below).

Peel and chop your apple into cubes, add granulated sugar.

And cinnamon.

Mix it all up and set aside.

Grab your puff pastry. I used ready made puff pastry squares, of 4 x 4 inch / 10 x 10 cm.

Add your apple mixture to a corner of the puff pastry squares.

Lightly brush some water on the edges of the puff pastry. It’s just to help the pastry stick, don’t make it too wet.

Flip or turnover the side of the pastry that doesn’t have any apple over the part that contains the apple. You should end up with a triangle shaped pastry, stuffed with apple.

Use a fork to seal the edges of the pastry.

Transfer the apple turnovers to a baking tray lined with baking paper.

Lightly whisk your egg and brush some of the egg on the apple turnovers.

Sprinkle with cane sugar and bake in the oven till they’re golden brown.

And there you have it, a beautiful, tasty, apple turnover. You can eat them hot or cold. I prefer them warm. You can easily make these in advance and heat them up in the oven for a few minutes before serving.

If you think these might be too big, you can easily make mini versions of these turnovers and make them bite size. I also like to add some homemade almond paste to an apple turnover sometimes as well, just to give it a little twist.

  • 1 tablespoon granulated sugar add more/less to taste
  • 1/2 teaspoon cinnamon add more/less to taste
  • 3 puff pastry squares 4 x 4 inch / 10 x 10 cm

  • 1 tablespoon raw cane sugar as needed

Instructions

  1. Preheat the oven to 350°F/175°C.Line a baking tray with baking paper.

  2. Peel and dice your apple and put into a bowl. Add granulated sugar and cinnamon and mix till all apple pieces are coated.

  3. Take your puff pastry squares, or, if you have a long sheet of puff pastry, cut 3 squares of 4 x 4 inch / 10 x 10 cm.Add the apple mixture to a corner of each square.Lightly brush the sides of the pastry with a little bit of water.

  4. Turnover the empty part of the pastry over the apples. You should end up with a pastry triangle stuffed with apple.Use a fork to seal the edges of the pastry.

  5. Transfer the apple turnovers onto a baking tray lined with baking paper and brush them with egg.Sprinkle with some cane sugar and put into the oven.Bake for roughly 15-20 minutes, until golden brown.

Recipe Notes

  • You could also make smaller mini versions of these apple turnovers and make them bite size.
  • Add some homemade almond paste to give the recipe a nice twist.

    I also did apple “turnovers” with Phillo dough. I brushed some melted butter between 2-3 sheets cut it in two or three parts (depending on the length). I used my imagination to pack them in a triangle with the apples on one side. (I grated the apples and cooked a bit with sugar and cinnamon in advance). I brushed some butter on top too. Bake in the oven until golden.
    The result was delicious. I am sure the puff pastry works too, but I didn’t know I could use fresh apple cubes.

      I’m glad to hear the pastry turned out delicious. Apple turnovers are so easy to make with puff pastry or phillo dough, grated or with cubes. I like them all 😀
